Blue Cheese, Date and Walnut Pesto Toastie Recipe

Imagine Friday night, you feel like watching a movie, you have your blanket wrapped around you, the skies are grey and it just starts to drizzle. You know that feeling? We have the perfect comfort food recipe to make that evening complete. This Blue Cheese, Date and Walnut Pesto Toastie makes every evening comfortably flavorful.

Ingredients

  • 4 slices of multigrain bread
  • 75 g of Blue cheese, soft and crumbled
  • 50 g of dates (about a handful), cut in small chunks
  • 40 g of walnuts
  • 10 g of pine nuts
  • 15 g of parmezan
  • 2 (small) cloves of garlic
  • 20 ml of olive oil (extra vierge)
  • Butter

Instructions

  1. First, we are going to make the walnut pesto. If you want to leave the pesto out, you can just chop up some walnuts into small pieces. If you want to do it the Toastie Lab way, stay with us! 
  2. In a bowl, mix the walnuts, pinenuts, parmesan cheese, garlic, and olive oil. Blend until you have a nice texture. We prefer not to blend it too long, to maintain the crunchy taste of the nuts. Put the pesto aside. 
  3. Cut the dates in smaller pieces. Set aside.
  4. Crumble the blue cheese into smaller pieces. Set aside. 
  5. Take two slices of bread and butter the outsides (optional). Then, flip them over. 
  6. Assemble-Your-Toastie Time: on one slice of bread, spread the cheese thickly (or place the crumbles of blue cheese). On top of the cheese, put the dates. On the other slice of bread, spread the pesto. If the pesto is not very pasty, make sure to press it into the bread so that it doesn’t come off when you flip it over. Which will be the next step… 
  7. Flip the toastie over and put it in your (as always) preheated sandwich-press or toastie-maker. 
  8. Grill for about 5 minutes, or until the bread looks crispy. Take the toastie out of the grill carefully. 
  9. Cut diagonally and enjoy!

Notes

  • Bread Tip: Dark, nutty, crunchy bread. We like a multigrain kinda bread.
  • Sauce Tip: None, the blue cheese and walnut pesto are all the sauce you will need!
