Grilled Cauliflower and Chickpea-Curry Vegan Toastie

Let’s take the two best ideas in the world and put them together: curry and toasties! Curries are just delicious and every curry day we are thankful for the Internet and its endless source of curry-inspiration! The same goes for toasties: the variations are endless and once you start seeing the potential of these two slices of toasted bread… WOW! So much to try! So here we are with our Grilled Cauliflower and Chickpea-Curry Toastie Recipe!

Ingredients

  • 4 slices of brown bread
  • 1 pack of curry paste (or one or two tablespoons if you’re making it yourself) 
  • Several cauliflower heads that are big enough to cut in slices of about 7 mm thick. 
  • 100 gram of chickpeas (pre-cooked) 
  • Dash of coconut milk
  • Coconut oil

Instructions

  1. Cut the cauliflower into slices of about 7 mm thick. Make sure they all have the same thickness. 
  2. Put some coconut oil on the grill and use a brush to spread evenly.
  3. Place the cauliflower-slices onto the grill and grill until done. They’ll be done when they have the grill-brand and are feeling soft (not too soft!). 
  4. Take the cauliflower of the grill (carefully – you don’t want to break them!) and put aside. 
  5. Now, put the chickpeas, a tablespoon or two of the curry paste and a dash of coconut milk in a blender or mixer. Blend, blend, blend. And taste to see if the seasoning is present enough. If not, add a little more of the paste! 🙂
  6. Make sure not to add too much coconut milk – only very little is needed!
  7. Take two slices of bread. Put coconut oil on the outsides. Make sure you put the coconut oil to soften slightly before you spread it on. If it’s too hard, you can apply the oil directly to the grill and use a brush to spread it out.  
  8. Flip the bread and put the chickpea-curry paste on one slice. 
  9. Place the grilled cauliflower slices on top. 
  10. Put the other slice of bread on top of that. 
  11. Place the toastie on the grill and grilllllll on for a minute or five – or wait until done.
  12. Take the toastie off the grill carefully. Garnish with coconut flakes. 
  13. Serve with Ginger Cilantro Ketchup and enjoy!
