Piri Piri Chicken w/ Mozzarella Toastie

This toastie combines a creamy mozzarella with chicken marinated in piri piri. Piri piri is a spice blend from Portugal with tons of flavor and a nice little kick to it. The added sun dried tomatoes add some sweet-tart intensity to this recipe. Served with spicy ketchup!



  • 4 slices of bread
  • Chicken fillet (slices – deli meats)
  • 2 tablespoons of olive oil
  • 1 tablespoon of piri piri seasoning
  • 1 teaspoon of chili flakes
  • Mozzarella (cut in slices)
  • Sun dried tomatoes


  1. Preheat the grill. 
  2. Mix the oil, piri piri seasoning and chili flakes in a bowl. Add salt if necessary.
  3. Add one slice of chicken on the bread. 
  4. Spread some of the marinade on the chicken with a cooking brush (pastry brush).
  5. If using more than one slice (recommended), marinate every slice individually. 
  6. Add the mozzarella on top of the chicken.
  7. Place some sun dried tomatoes on top of the mozzarella. 
  8. Put the second slice on top of the toastie. 
  9. Place the toastie on the grill
  10. Grill until the bread is crispy, or until the cheese has melted. 
  11. Cut diagonally. 
  12. Mix an extra pinch of chili flakes with the ketchup to spice it up. 
  13. Enjoy!


  • Bread tip: Something rustic and crunchy (white)
  • Sauce tip: Spicy ketchup (ketchup with chili flakes works perfectly!)
