Description
This toastie combines a creamy mozzarella with chicken marinated in piri piri. Piri piri is a spice blend from Portugal with tons of flavor and a nice little kick to it. The added sun dried tomatoes add some sweet-tart intensity to this recipe. Served with spicy ketchup!

Ingredients
- 4 slices of bread
- Chicken fillet (slices – deli meats)
- 2 tablespoons of olive oil
- 1 tablespoon of piri piri seasoning
- 1 teaspoon of chili flakes
- Mozzarella (cut in slices)
- Sun dried tomatoes
Instructions
- Preheat the grill.
- Mix the oil, piri piri seasoning and chili flakes in a bowl. Add salt if necessary.
- Add one slice of chicken on the bread.
- Spread some of the marinade on the chicken with a cooking brush (pastry brush).
- If using more than one slice (recommended), marinate every slice individually.
- Add the mozzarella on top of the chicken.
- Place some sun dried tomatoes on top of the mozzarella.
- Put the second slice on top of the toastie.
- Place the toastie on the grill
- Grill until the bread is crispy, or until the cheese has melted.
- Cut diagonally.
- Mix an extra pinch of chili flakes with the ketchup to spice it up.
- Enjoy!

- Bread tip: Something rustic and crunchy (white)
- Sauce tip: Spicy ketchup (ketchup with chili flakes works perfectly!)
