Vegan Muhammara Toastie

Description

Sweet, savory, spicy and even a hint of sour: this Muhammara toastie HAS IT ALL! And the best of it all, IT’S VEGAN and super easy to make! Transport yourself to a magical moment with this delight of a toasted sandwich!

Ingredients

  • 4 slices of bread
  • 1 or 2 bell peppers (or a jar of grilled peppers)
  • 25 gram of walnuts (finely chopped)
  • 50 gram of tomato paste
  • 1 teaspoon of chili flakes
  • ½ teaspoon of cumin
  • ½ teaspoon of (smoked) paprika powder
  • ¼ teaspoon of garlic powder (or 1 clove of fresh garlic)
  • ¼ teaspoon of sumak (optional) 
  • 1 dash of olive oil (optional: more to put on the grill) 
  • Pomegranate syrup (or molasses)
  • A few drops of lemon juice

Instructions

  1. If you are using fresh bell peppers, cut them in slices and cut out the seeds and stem. Sprinkle them with oil and place them in the oven or on the grill (use your toastie grill!). Depending on how soft you like them, you’ll need to grill them anywhere between 10-15 minutes in the oven (200°C / 395°F) or 5-10 minutes on the grill. Turn regularly. 
  2. If you’re using grilled peppers from a jar, dry them off with some kitchen towel if they’re very watery (if you like the oil, leave it on!) and cut them however you like. 
  3. Next, place tomato paste in a bowl. Add herbs, spices, olive oil, lemon juice and pomegranate syrup. Depending on how sweet you like it, add more or less of the latter 🙂
  4. Chop up the walnuts and add them in with the tomato paste-mixture. 
  5. Spread tomato paste on the insides of the bread, on both sides. Make sure to add a nice and thick layer because this will be the flavor part of your toastie!
  6. Add a layer of pepper on one side and close the toastie. 
  7. Sprinkle some olive oil on your grill (optional). Or, if you used the grill to roast your peppers, use that oil! Yummy! 
  8. Grill for 5 minutes or until the bread is crispy. 
  9. For the sauce, put some tomato ketchup in a bowl and add some more of the pomegranate syrup. If you want to spice it up, add some chili flakes to it!

Bread Tip: Sesame seed bread

Sauce Tip: Ketchup with another dash of pomegranate syrup, or two. And some more chili if you like it spicy. And some more pomegranate 🙂
