It\u2019s the secret to a great start to the day. Really all you need is a blueberry muffin and a steaming\u2019 cup of coffee when you\u2019re on your way to work, right? And the secret of great blueberry muffins is butter and blueberries. That sounds like something you could eat on a toastie! Turn your bread into French toast and this toastie becomes something otherworldly delicious and luxurious!<\/strong><\/p>\n\n\n\n

Recipe inspiration<\/strong><\/h2>\n\n\n\n

I feel I gave it away already, but in our search for an easy morning recipe, we have come to admit we are a big fan of blueberry muffins. And coffee, of course. As always, we are inspired to see how we can turn anything <\/em>into a toastie. And this recipe is one such wonders! When we think of the perfect recipe for a blueberry muffin, we think of fresh, organic blueberries and lots of creamy butter. <\/p>\n\n\n\n

Jack also went to university in Maine, USA. <\/p>\n\n\n\n

Fun Fact: Maine<\/strong> produces 99% of all the wild blueberries<\/strong> in the USA, making it the single-largest overall producer<\/strong> of blueberries<\/strong> in the United States. No wonder we were drawn to making a blueberry inspired toastie. <\/p>\n\n\n\n

Why We Love It<\/strong><\/h2>\n\n\n\n

We love to turn existing recipes into something new. To put them in a new coat, right? Yes, a Toastie coat. We took that kinda literal with this one. But it works! We love how easy this toastie is to make and we love that we can pretend to go to work with a blueberry muffin, without having to spend hours working and waiting in the kitchen on real muffins. <\/p>\n\n\n\n

Equipment<\/strong><\/h2>\n\n\n\n

You might be used to making your French toast in a pan. Today, we are going to make it in a toastie-maker! The experimental \u201cLab\u201d that we are, we have tried both the toastie-maker and the sandwich-grill. Apart from either a sandwich-press or a panini grill, you\u2019re only going to want to use a whisk\u2026 And even that is replaceable by a fork. It\u2019s the best of both worlds: Muffin flavoured, toastieasy. <\/p>\n\n\n\n

  • Whisk <\/strong>(Any Brand is Fine)<\/li><\/ul>\n\n\n\n

    Feeling Blue? <\/strong><\/h2>\n\n\n\n

    Let\u2019s start with the most essential part of this muffin toastie: the blueberries! (OK, really all we care about is the butter, but we can\u2019t really say that…) So, blueberries. If it\u2019s blueberry season you really want to opt for the freshest, most organic blueberries that you can find. If its off season, you could see if your supermarket has frozen blueberries, or blueberry jam. Our supermarket even had a blueberry spread – only half the sugar! <\/p>\n\n\n\n

    Depending on your toastie needs (snack, breakfast, desert, sweet-tooth moment), you could, A) go for fresh blueberries, B) choose blueberry jam, or C) all of the above. <\/p>\n\n\n\n

    Vanilla or Cinnamon?<\/strong><\/h2>\n\n\n\n

    You will find most blueberry recipes with either vanilla aroma or cinnamon. We choose for option C) all of the above. The combination of vanilla and cinnamon gives this recipe it\u2019s dessert-like flavor. Call it sophisticated, if you like. <\/p>\n\n\n\n

    Crust or No Crust?<\/h2>\n\n\n\n

    I remember the days when I did NOT want to eat the crusts of my bread. I also remember the days when I was visiting my grandmother and she would prepare me \u201cWentelteefjes<\/strong>\u201d (the Dutch version of French toast), without crusts<\/em><\/strong>. <\/em><\/p>\n\n\n\n

    As of today, I am still convinced that the official recipe does not include the crust of the bread. However, the person I am currently sharing my lunches with – lab-collaborator Jack – insisted on keeping the crusts on the bread. <\/p>\n\n\n\n

    Creative as we are, we went for option C) all of the above, again. And we tried both with and without crust. I liked A) without crust, Jack liked B) with crust. You can make your own choice \ud83d\ude42<\/p>\n\n\n\n

    Wentelteefjes<\/strong><\/h2>\n\n\n\n

    Another memory of those times I was eating Wentelteefjes without crust with my grandmother, is the image of a newspaper comic about \u201cEefje Wentelteefje\u201d. Of course, I felt like a star because my nickname is Eefje, (or Eef, short for Eveline). <\/p>\n\n\n\n

    Little did I know that the English translation of the dish was slightly less flathering than I could ever imagine\u2026 (Yes, French toast in Dutch is freely translated as \u201cTurning Bitches<\/strong>\u201d!). Hmmmmmm. Still delicious, nevertheless. <\/p>\n\n\n\n

    Additionally, I remember making the Wentelteefjes with lots of sugar and cinnamon, replacing regular sugar with vanilla brought this recipe to a completely new level! Not to mention the blueberries \ud83d\ude42 <\/p>\n\n\n\n

    OOOOH! My First Recipe Ever!<\/strong><\/h2>\n\n\n\n

    I JUST REMEMBERED THAT THIS MUST HAVE BEEN ONE OF THE FIRST RECIPES I HAVE EVER MADE FROM A COOKBOOK! <\/em><\/p>\n\n\n\n

    When I was a kid, someone gave me my first cookbook, and the Wentelteefjes was one of the recipes. It definitely triggered something!<\/p>\n\n\n\n

    Butter!<\/strong><\/h2>\n\n\n\n

    The trick of making good muffins is by adding butter. Normally, we would spread some butter on the outsides of our toastie. <\/p>\n\n\n\n

    But this time, the toastie would be drenched in an egg and milk mixture. To make sure the toastie would come out nice and buttery, we decided to add the butter onto the grill, right before placing the toastie. <\/p>\n\n\n\n

    Sandwich Grill Vs. Toastie-Maker<\/strong><\/h2>\n\n\n\n

    The discussion on which equipment is best for making toasties continues. And heated as it may get, Jack and I both had to admit that today we had no winner. Both the toastie-maker and the sandwich-press did a fabulous job at toastie-making today. <\/p>\n\n\n\n
