Description
It must be the easiest dessert in the world, yet it’s so delicious… mascarpone and strawberries! Mascarpone tastes like toughened up whipped cream, but without the overly sweet sugars added to it. Strawberries are, well… strawberries are strawberries! YUMMY! And with fall ready for us, we have to take advantage of the last batches of fresh, locally grown strawberries!

Ingredients
- 4 slices of white bread
- 2 tablespoons of mascarpone (or a little more 😉 )
- 1 handful of strawberries, cut in slices
- 1 tablespoon of balsamic vinegar
- 1 tablespoon of sugar
- 1 handful of fresh mint leaves, finely chopped.
Instructions
- Take the crown off the strawberries and cut them into thin (not too thin) slices. Then, put the strawberries in a bowl.
- Add a tablespoon of Balsamic vinegar and a tablespoon of sugar. Add some chopped up mint, if you have it available.
- Mix everything together and let it sit for about 15 minutes, minimum. If possible, let it sit for more time.
- Take two slices of white bread. Spread some butter on both of them and flip them over.
- On one slice, spread a good amount of mascarpone.
- On top of the mascarpone, place the strawberries either tightly in line with each other, or slightly layered.
- Add the second slice on top of that.
- Put the toastie in the pre-heated toastie-maker.
- Wait until done (should be about 5 minutes, but this might depend on your toastie-machine).
- Take the toastie out of the iron, carefully. Cut diagonally and imagine yourself in Italy 🙂
