Vegan Pea & Mint Spread with Zucchini Toastie

This toastie was born as a pizza recipe, but is now one of our favorites toasties. This green toastie is totally green and therefore doesn’t only taste delicious, but is also beautiful to look at!

Ingredients

  • 4 slices of seeded multigrain bread
  • 125 grams of green peas (either fresh or cooked)
  • Handful of mint leaves
  • Juice of half a lemon
  • 2 cloves of garlic
  • ½ a zucchini (cut in slices of ½ cm thick) 
  • 3x 1 dash of olive oil (separate)

Instructions

  1. Drizzle some olive oil on a preheated sandwich grill. 
  2. Grill the zucchini until it is cooked, but still crispy (this should take about 3 minutes). Set aside.
  3. Make the pea-spread by combining the peas, olive oil, lemon juice, mint and garlic in a blender. 
  4. Blend until you have a chunky spread (or make it smoother by adding some more water and/or olive oil). Add salt if desired.
  5. Spread a thick layer of the pea spread on one slice of bread. 
  6. Place the zucchini on top (make sure there is not too much filling)
  7. If desired, place another layer of pea spread on the inside of the other slice of bread. 
  8. Drizzle some more olive oil on the grill. 
  9. Place the toastie in the center of the grill. 
  10. Ready in 3-5 minutes or when it is crispy!

Preparation time for this toastie should be about 10-15 minutes. This includes cutting and grilling the zucchini, preparing the spread and preheating the grill. 

If you start by preheating the grill, you’ll make sure that it is hot enough by the time you get to grill the zucchini. 

Depending on how thick your zucchini slices are, and how hot your grill gets, grilling should take about 3 minutes. However, it might take longer so be prepared to adjust your time schedule accordingly. 

Making the spread is very easy, as long as you have boiled the peas in advance. Peas only need 3-5 minutes to boil so even if you haven’t done it yet, getting the pot to boil and preparing the peas on the spot doesn’t take more than 10 minutes in total. 

What makes Vegan Pea & Mint Spread with Zucchini Toastie special? 

The Vegan Pea & Mint Spread with Zucchini Toastie is a vegan toastie that is still super delicious! By using (plenty!) of garlic, lemon and mint in the spread, this whole toastie becomes a huge flavor bomb. 

If your spread is too plain, add a dash of salt to boost some of the flavors. 

You can also marinate the zucchini before grilling it in vinegar, olive oil, salt, garlic, and italian herbs (basil, thyme, oregano). In that case, don’t use the oil before grilling the zucchini and instead use that for the marinade. 

Let the zucchini marinate for at least five minutes before grilling.

Can I add cheese to the Vegan Pea & Mint Spread with Zucchini Toastie?

If you want to add cheese to this toastie recipe, there are actually three really good options: 

  • Cottage cheese
  • Goat cheese
  • Feta

All three cheeses will make this toastie creamy and definitely add some more flavor to it. However, in and of itself, this toastie is vegan and already super delicious! 

Cottage cheese will boost the protein content of this toastie and together with the peas, it will actually be quite protein-rich!

Goat cheese brings more flavor and creaminess to the toastie, but in a subtle way. It’s a mild, but creamy variation. 

Feta is a saltier alternative, so if you’re using feta cheese, make sure you leave out any extra salt during this recipe! 

When using cheese, place the cheese on top of the spread but underneath the zucchini. This way it will mix perfectly with the spread. 

The toastie is ready whenever the cheese starts to melt. 

Which bread do you recommend for the Vegan Pea & Mint Spread with Zucchini Toastie?

First of all, because this toastie will be kind of thick to begin with, your best bet is to use a sandwich grill instead of a toastie maker. With that in mind, you might as well make this toastie even thicker and opt for some artisan bread (and not the boring white bread for toast) 

There are two ways to go about this toastie: 

  1. Sourdough bread
  2. Brown bread that is grainy, nutty, seedy and hearty 

Both breads will be delicious. However, if you’re adding cheese to this recipe, I’d opt for a more plain type of bread since the toasted sandwich will already have so many different flavors. 

Can you add meat to the Vegan Pea & Mint Spread with Zucchini Toastie?

Again, this toastie is in-and-of itself super delicious! But if you were craving meat, I would opt for adding bacon to this recipe. The salty bacon would combine very well with the pea spread and zucchini and add some more flavor (and especially salt!) to the recipe. 

If you’re using bacon, grill the bacon on the sandwich grill, but without closing the lid. This way the bacon can slowly cook. Flip the bacon several times until it is thoroughly cooked. 

Then, add the bacon between the spread and the zucchini.

Could you make the Vegan Pea & Mint Spread with Zucchini Toastie on a toastie maker? 

If you make some adjustments to the toastie recipe, you can easily make the Vegan Pea & Mint Spread with Zucchini Toastie on a simple toastie maker instead of a grill. However, you’d have to make sure you cut the zucchini much thinner and you might want to use a separate (grill) pan to prepare the zucchini. 

Preparing the zucchini when it is smaller makes it more likely to break during the grilling process. So while the flavor might still be fine, you might need to put some more effort into the recipe to make it look more aesthetically pleasing 🙂

Can you eat sauce with the Vegan Pea & Mint Spread with Zucchini Toastie?

This toastie is classic in the sense that you should totally eat it with ketchup on the side. Totally unnecessary but super delicious! 🙂
